I know that’s a stupid idea but it came to me and I felt like writing it.
Not nuts: just, as a said, her way of joking and having fun.
Anyway in a world where Pinkie Pie and Discord exist, nothing really seems that odd.
In a human-ish world, it looks like Maud needs a specialist.

Also in between she was chewing down on one of the rocks/gems from Rarity’s hat that fell into AJ’s basket, so no way she ate that sandwich herself. :)

Actually, the bite was already there when she put him down.
When the camera looked back, it was gone.
But then the camera cut away, and when it came back, there was a big bite out of Boulder’s sandwich.
So either there is more to Boulder than we assume, or Maud ate part of the sandwich when nopony was looking to keep up the illusion that Boulder is alive. You have to ask yourself which theory is more nuts.
There was a comment/thought experiment I saw somewhere (TVTropes?) that everything that Maud has said or done , could easily fit Pinkie’s own approach - they’re both literal-minded but only differ by attitude.
COnsider that Pinkie offered Gummy a cupcake by putting it on his head.
Actually he did eat the food she gave him,
But she knows it’s just a rock, so it seemed like she was “kidding”… in her straight-face way.
Here… she’s thrown a lot of food on the floor.
