Hold on, I’ve since found out some more info. As a kid, I was watching the 1991 VHS version, which does include Deems Taylor’s narration but was also heavily truncated. For the DVD and Blu-ray version, they restored it to its original length, but the audio was lost, so Burton had to dub it so that the difference between the admittedly very similar voices wouldn’t be as noticeable.

There were also other edits. Like, I distinctly remember that the VHS
Fantasia faded to black after the scene where Mickey talked with Leopold, but in the Blu-ray version (which is allegedly most similar to the original theatrical release), it cuts to the orchestra applauding for Mickey. Similarly, I remember the VHS tape having an opening title and closing credits, which I guess must have been inserted in there because apparently those weren’t present in the original theatrical release.
It would be interesting to find a high quality rip of the VHS version so I can compare the two.
Geez, who’d have thought that
