Notice how every time AJ or Mac bucks a tree, good apples always fall neatly into whatever buckets they have under the tree, but in Sisterhooves Social the unsellable apples were scattered all over the ground and had to be picked up individually. That suggests pretty strongly that they’re able to specify with how they kick which kind of apple they want to fall, and the bad ones don’t respond to the “GIT IN MAH BUCKET!” instructions. Granny just has high standards, that’s why she pulls the ones out of the Good stock that ain’t quite good enough.

No, it’s Granny Smith’s work. Also, leaving bad and rotting apples on Apple trees is generally bad idea.

Not pictured from this scene: the extra day’s worth of work the Apple Family had to do to pick out all the wormy apples, over- and under-ripe apples, leaves, and twigs from the giant haul Twilight pulled out of the trees all at once without realizing that part of Earth Pony treebucking magic is kicking the trees in such a way that only the good apples fall out.

They really don’t have to. If one writes normally for Applejack and Rarity, the shipping fuel simply creates itself, like a quantum anomaly. ;D

I don’t even care about the Twilight and Spike part, just make Rarity and AJ at the spa as Ship teasey as possible!

Of course it’s difficult. For them. Because they never have done it. For AJ, it’s not “difficult” or “easy”, it’s routine.
 
It’s like asking artist to write app for extracting “Hello world” string from database. Or asking programmer to sketch and then lineart a single character. Both tasks are relatively simple, but not for inexperienced hands. It wouldn’t prove that “being programmer are hard”, or “being artist are hard”, it would only prove that a person can’t be perfect at everything on a first try.
