Probably because the card makers don’t have any actual inside info on said character, so they made up something that is plausible without trying to step on the show writers’ toes.

Fathers are very often mentors, as are significantly older siblings.
 
Then why not call him “dad”? “Brother”? Why actively avoid that and call him mentor instead?
