Per the spider battle, if he can anticipate a hit coming and tenses up, it doesn’t hurt and he can take the hit. He wasn’t expecting either Maud or Limestone. In both cases he was taken by surprise. Also, rule of funny.

You know, I thought when we’d eventually see the minotaurs they’d all be male, given that only the king was mentioned and such. I didn’t expect females. Or that Pencils would make them sexy.
 
Also, I’m guessing there’s going to be tons of puns on milking for awhile.
 
I, too, think the guy they’re speaking to is the Choosing Stone, or rather the human that’s trapped inside it. And if the minotaur were humans who were turned to beasts and survived, it would give a reason for them to be loyal to it/him, if they were under him previously.
