It’s not a matter of intelligence.

Twi just turned around after hearing steps behind her, and POOF – stoned almost instantly. Before she could react and close her eyes or turn around.

(My headcanon is that Fluttershy was turning to stone slowly in “Stare Master” only because the cockatrice was so friggin’ scared of her Stare.)

I’d like to believe that Twilight is smart enough not to turn to stone…
kinda like what’s his face that hid his eyes from Medusa with a really shiny shield.
