Also the quote says ‘lay down ones life’ not ‘die’. I think that implies risking your life, whether it kills you or not
Some would consider the potential of being petrified forever to be even worse than death.
Besides, I have no doubt Derpy would have still done it if she were absolutely certain she would die for the effort.

I don’t think she knew if this was a survivable petrification or not. She just had time to realize the last adult princess was in danger and there was something she might be able to do.

I doubt Twilight and friends would have gotten away if Tempest hadn’t been distracted. But even if I’m wrong on this score the fact remains that Derpy risked everything for Twilight.
