Also, what makes Pinkie funny is that she talks a lot, she does verbal jokes in addition to her physical gags. Pyro does not talk.

I have to admit that I would see Pinkie Pie most likely as pyro. Party, candy, psychedlic fantasy, being overly happy in most situations, having a mad side that makes people afraid of them and not really realising it.
 
On the other hand, what you said, makes sense too.  
She’s well organised, builds - sometimes genius - contraptions and has her stuff everywhere.  
To be honest, I thought about that already but it felt like that this side of her shows not as much as the Pyro one.
 
Yes, Pinkie Pie is quite versatile and fits to further classes even, but I will take this into the chat, would get off-topic.

Pinkie really can fit any of the 9 classes without much of a stretch, save maybe the medic and sniper. As for why I chose for her to be Engineer instead of, say, Demoman or Pyro, there’s a couple of reasons.
 
I will not argue that Pyro doesn’t fit Pinkie, it really does work well. However, Pyro is one of the least zany classes in game. Sure, he has a few weird taunts and cosmetics, but when it comes to gameplay, the craziest thing he can do is airblast projectiles and fly with a jetpack, and for me, that’s kind of… limiting?
 
As for Demoman, we’ll have to bring in the most popular pick for Engineer: Applejack. I mean, both of them have that southern accents, and the Engineer has a wide variety of “Texas” cosmetics, makes sense to have her as Engineer. However, Applejack is not a… gadgeteer(?) much like the Engineer is. Yes, she knows more than a thing or two about construction, but there’s a difference between fixing a leaky steam valve or building a barn, and designing and building automated turrets and teleporters. She’s a hard working pony who puts her family above all else. Strangely enough, that’s how Demo is portrayed in the comics, for the most part.
 
Now, Pinkie’s a goofball on the surface, but there’s a method to her madness. Imagine all the work that went into the party planning cave, not just the fact that Pinkie keeps note of everyone’s interests and disinterests but also all the mechanisms. Sure, it’s not implied that she built it all herself, but between that, her cannon, her flying contraption for Griffon the Brush Off, and various other examples, such as the hidden confetti cannons in Twilight’s Castle, I’d say it’s safe to assume Pinkie herself is a bit of a gadgeteer.

I need help to see the connection to the engineer though.  
If the sentry gun is a substitute to the cannon, then I find the demoman more fitting.

I just need another character to prove my theory.

Okay, you’re creating an excuse to put the characters in this sequence with a stereotype excuse, but in fact you’re just following the mk sequence, you have no creativity, pinkie engineer, and the easiest thing to refute. But of course it will not do anything, because you are just another follower of mk.and the blandest thing that i has ever seen, where a in a pony happy maniacal, way has to have with guy calm, hard-working, polite and generous , and of course has to have at least something that refers to machines, you remember the episode of the spar? And my dear, applejack is the engineer, saw equestria girls? pinkie and the pyro.
