The full quote, as mentioned earlier is “People die if they are killed and that’s the way it should be.”
So: people die when they are killed. This is obvious. What that quote doesn’t include is all the instances where Shirou DIDN’T die when he really should have. This quote comes from a scene where he’s found the source of his apparent immortality and is choosing to give it up so that he can have a better chance of winning the final encounter of the storyline.
Yeah. I’m not familiar with Fate/stay night, but I believe Shiro was referring to someone who survived something that they really, really shouldn’t have survived.
For anyone who’s curious, this refers to a Japanese idiom that describes people as so tough that “they don’t die even if you kill them”. “People die if they are killed” is what you get when you translate a line literally.
