I agree. Tossing it in the trash, offering it to the receptionist, or just sipping it as she walking away. I think there is something to Coco punctuating her walkout on Suri by “drinking her milk shake.”
I mean my goodness, the whole fandom sometimes seems way too vindictive and callous. We literally have pictures of Coco beating the crap out of Suri. It is kind of alarming. Does everyone here really prefer this kind of petty revenge over forgiveness?

You my friend are not alone. I mean, what would throwing coffee in Suri’s face really accomplish for Coco besides demeaning herself? Just because Suri wronged Coco does not mean Coco has to act like Suri.

While the episode didn’t really need this scene, seeing a character painted as the villain with no hope of redemption getting off scott free makes the episode feel lacking.
I mean, I don’t expect Diamond Tiara and Silver Spoon to get chewed out for being jerks, and their little “punishments” (falling into mud, being pulled into helping with Zap apples, losing the EGames flag thing) are suitable “ha-ha” moments. Or take what they did with Lightning Dust - enough to know that being bad has repercussions.
Suri needed one because the episode leaves it hanging that she basically got away with stealing and being a jerk to not only Rarity but Coco. Even one line from Coco at the theater to say “Oh, and Prim Hemline has banned Suri from all future fashion weeks” would have been sufficient to close that out without taking too much time to set up such a scene. Everything else about the episode was great, but this open-ended villainy screams for the need of closure, and while a pic like this is perfect.
