North and South Korea (split after WWII, the totalitarian North has isolated itself with China as its only ally while the South is prosperous, Northern propaganda claims they’re best Korea while the South Koreans feel sorry for the way their neighbors are forced to live, and there is no peace between them but a mere ceasefire which lasts since 1953, aside from the occasional clash).

As far as Twilight being china, I say it has to do with her studious nature and her intelligence, historically china is well regarded for its scholars, philosophers, and its engineering might (they invented gunpowder!). China is also an Manufacturing and economic powerhouse, and can outproduce any country in manufactured goods, even more than the USA! And Twilight is easily one of the most powerful ponies in terms of ability, with a magical ability that’s second to none!
 
Her somewhat reserved nature also ties in well with traditional china, with its citizens rather reserved and polite, not unlike modern day Japan.
 
As far as Rainbow Dash being Japan, its more apparent if you look at “ Imperial Japan”, and even before that, although it does seep into modern Japan as well. Japan is historically well known for its warrior culture, and its willingness to fight, just like Rainbows love for the warrior image and her willingness to “buck first and ask questions later” both are in a way “small person, big ego”with their tendency to be aggressive and to go after something, even if its way bigger than itself, (RD bucking a dragon/ Japan attacking Russia and the USA) not that either of them is weak, they have proven that before!
 
They also are rather reserved, and strive to maintain an certain Image, (the Japanese concept of “ Saving face”), and its really shameful for anyone to see your vulnerabilities). They also strive to be successful, and work hard to be the best. In a way, the collected exterior hides a much more vulnerable nature inside, and Rainbow really doesn’t want to be seen as less than her best.
 
So, while fluttershy may be considered by some to be the quintessential Japanese woman, both in her demure nature, her excessive politeness, and delicate look, Rainbow best represents the Spirit and culture of Japan through her confidence, her obsession to be the best (and not let her vulnerable side show), and her willingness to step up to a challenge, no matter how big a challenge it is.

Possibly, but I think his obsession with his appearance, his confidence, his (attempted) charming nature, his handsomeness, and his royal blood all contribute to why he was selected as Spain. Think of the stereotypical “ Casanova wannabe “ Is usually portrayed as a Spainiard.
