And turned Rarity into Nightmare Rarity? I ask this because it wasn’t just magic that was involved. A deal with a malevolent spirit was involved with Luna becoming Nightmare Moon, too. And that same spirit later took hold of Rarity through false promises and emotion manipulation.

Luna did create the Tantibus after she was defeated, yes.
 
But! She may have made it from the same negative nightmare magic that transforms her into Nightmare Moon.
 
The Tantibus behaved a lot like a non-sentient separate Nightmare Moon throughout the episode, IMO.
 
I will go ahead and add the headcanon tag since it’s not 100% confirmed.

I guess that’s a good thing, right? Complexity means depth right?  
Except I think it creates confusion for all of us detail oriented bronies who are trying to keep track and understand her canonical-ness…
