There’s only one explanation:  
BIG MAC HAS AN EVIL TWIN.
 
… Or, like, a slightly more belligerent twin. Like, when he meets other ponies he’s totally judging them even though he doesn’t say anything.  
Good Big Mac would get rid of his over-opinionated brother, but frankly the Acres need two of him around to cover for Applejack’s time off when she’s having adventures.
