Well, with less than 5 minutes of total screentime (maybe more, given the archery incident), I don’t think it’s fair to assume we can establish a constant with Sour Sweet. Her personality shifts look a lot more like BPD than classic “tsundere”. After all, she works in the opposite manner as them, starting off with a pleasant tone and ending the sentence with a growl. Also, her shifts are a lot faster. A tsundere going from tsun to dere usually takes a considerable amount of time.

All it really takes to tall them apart are the constants, the common patterns of each form of characterization.  
For example one of the most integral pieces to a tsundere is a hard outer shell and a soft core, like a walnut.
 
“Emotional dishonesty?”  
That works in the context of tsunderes how are tsun-tsun because of emotional dishonesty like Helga from Hey Arnold.  
It’s like the whole bipolar thing we just talked about - tsunderes can be bipolar, emotionally dishonest, etc, but they aren’t integral.

Not necessarily.  
Bipolar disorder implies moods swings (more specifically manic and depressive ones).  
Tsundere implies a person that acts hostile or dismissive towards people (or just people they have sympathetic and/or romantic feelings for), but is actually a softer person inside or has the capacity to softer in a give context (again those people they care for)
