It means “unnecessary through being too much.”
 
Saying that earth ponies will “render unicorns superfluous” is saying that the unicorns still have more than enough power/talent/ability/etc to do the job, while earth ponies don’t.
 
Which is saying that unicorns are superior, which is exactly the point I was refuting.
