You will need to use your complex filter, it's the box under your "hide" and "spoil" list in your filter. If you want to filter all pics that are tagged anthro AND not tagged griffin, you need to add this to your complex filter input:

 
anthro, -griffin


 
You can add this to your complex spoiler filter, or your complex hide filter. If something's not clear, please tell me.
