To try and simplfiy it, as far as physical differences go:
Pegasian = high endurance, speed and metabolism, very sharp hearing and eyesight, petite frame ('bird like', basically)
Earthen = large frame, and they carry more muscle and fat
Unis = naturally much stronger (and more reliant upon) magic abilities.
(everyone can use magic but the unis are far more potent at it. with a great amount of practice and focus an earthen could for example do simple things like levitation, but would struggle to ever do something like scrying, telepathy or teleportation which some of the more adept unis can do)
Alicorn = Only a few examples have existed so it's hard to generalise but they're thought to have the traits of all 3 races together. Twilight is 'exalted' because she was not born an alicorn but exalted to be one by Celestia.
I'm still trying to make my writeup about em more concise, since I want to talk both about how they are in modern equestria, and also the way they adapted socially and physicaly to live in different environmental conditions and thus developed these traits... =p. but yeah that's an overview
