You do realize that a character can have more than one character trait, right?
Just because she asserts herself doesn't make her a bitch. Sure, she was bitchy in "Putting Your Hoof Down", but it's been clearly established that she can be easily talked into playing a certain role under certain circumstances, which is essentially what Iron Will did to her there.
All the other episodes you're talking about are examples of her ceasing to be a doormat as a direct result of her character growth, not being a "heartless bitch".
