You have to wonder at what point the joke becomes the character, and then defines them.
 
Look at Pinkie Pie; her 4th wall breaking, physics abuse and access to hammer space started off as once-every-few-episodes gags, but now they’re basically all she is.

It’s easier to write jokes about her being self absorbed.  
And she was written as the Element of Inspiration and a subversion of the mean pretty girl trope. So many jokes revolve around her somewhat facetiously fulfilling that.
 
So yes there is a disconnect with things like this but ultimately she’s concerned with others as shown by reassuring Sweetie in non-filler scenes

I love Rarity and Sweetie’s dynamic.
 
There’s obviously sisterly love there, but they also enjoy manipulating each others’ emotions and yankin’ each others’ chains.
 
Sweetie guilted Rarity into goin’ on this trip in the first place, and even with Sweetie being treated like a slave in this ep, Sweetie is still in complete control here.
 
That little smile she turns on here shows that she is equally adept as her sister at mind-games, if not moreso.

Rarity is the center of a whole lot of visual gags that don’t exactly shed good light on her, tbh. It often feels like her element being Generosity is a joke, or made to look outstanding for when she actually conforms to it.

I think Sweetie has it worse here…
 
She’s pulling and pushing, uphill, her own sister, who is in her usual state of mind.
 
Snips and Snails were pulling somepony that was going insane in a wheelless chariot.
