Also in persian mythology, we have a Horse that is the “earth” equivalent to Pegasus.
 
For birds we do have simurg. Vultures are seen as good luck (if a shadow passes you not circle you) and peacock is shown in many pictures.
 
Other animals are manticore, karkadann, and im not sure the authenticity of “the man eating” Shadivar, a beautiful creature graceful as a gazzel, with a magical horn that when wind blows through it plays a siren like music to lure men.

Arabic/Persian griffons seems odd to me…
 
… until I remembered that griffons were always in the kingdoms to the East in Classical Greek mythology (e.g. Asia Minor). Then it made a lot more sense.
