It seems implied their heads, and eye positions are a bit more anthropomorphic frankly given the show designs aren’t exactly like a real horse. They resemble real horses about as much as Knuckles resembles a real echidna.
That makes sense, although there’s evidence of Equestrian ponies also having some level of binocular vision.
Horses have eyes on the sides of their heads. She’s using her peripheral vision to scan all the titles at once instead of her binocular vision to focus on any particular book.
