I was gonna say something about the poor uterine tone and the likelihood of catastrophic dystochia but then I remembered I was in the comments of a hyper pregnancy picture.

We have nothing in canon to tell us, but actually we can tell how they reproduce. It’s just a matter of being knowledgeable in animals and biology. We don’t need to know every single type of bird to know that they all lay eggs. Animals fall into groups, and the rules for one group go for all creatures in it. Life is handy like that.
Gryphons and Hippogryphs are a nuisance because they’re potentially more mammal than bird. But from what I can tell, if it has a beak, then it’d gonna come from an egg no matter what. This applies to beaked mammals in real life afterall.
But these are actually anthro versions of the two races, which now adds in some human genes. At this point it is a bit too much of a mess for me to wanna touch. But another fun fact; if it has breasts, it’s not gonna lay eggs. So if it has a beak, but also breasts… Then we have no earthly clue and nothing to go on in that regard.
