Headcanon backstory:
 
Gilda was born in the capital of Griffonstone, Griffintree. Just like with many griffons their mother abandoned them and his siblings at the age of 2. Gilda was one of the shier griffons and attempted to stick with their siblings, but ultimately ended up separated. They almost gave up on life when they were 3, but fought for a little longer and got discovered by a random stallion on an expedition to Griffonstone. He gave her some food and a blanket and left her alone, however Gilda knew that wouldn’t be enough. When the stallion came back she snuck on the boat he was using and traveled back to Equestria with him. Like that she ended up in a pony orphanage. Even though he got bullied for their griffonness now and then Gilda learned to build a thick skin. At 8 they were sent out, with other pegasi, to flight school where they met their best friend and first crush, Rainbow Dash. They would eventually drop out of flight school and somehow ended up back in Griffonstone, but still kept in contact with Rainbow. They also discovered their love for baking while on pony lands, but it took them a couple of years to master the craft.  
Random Facts:
 
-He started dating Rainbow when they were still married to Soarin, because of the son they had on accident (Gallion)
 
-Upon moving in pony lands Gilda didn’t really know what to do as a job until Rainbow suggested they try baking and kind of forced them a job at Sugarcube Corner with help from connections to their friend, Pinkie Pie. At first, Gilda had difficulties baking pony treats, but she eventually got the jist of it. Pinkie even learned how to make some griffon sweets and started selling them in Sugarcube Corner too.
 
-Gilda moved to Ponyville when Gallion was only 2 years old and the two of them lived in the attic of Sugarcube Corner for 2 years (the place where Pinkie used to live).
 
-The mother and his son moved to Rainbow Dash’s house after they finally divorced their husband.
