For kinda the same reason you roll two d10 to get a number from 1-100 instead of trying to make one die with 100 sides; there’s a practical limit to how many options you can fit on one of something before the whole thing gets too cluttered to be easy to use.

I just assumed they worked in Morse code.
Left is dot, right is dash. (Each press moves the gears along a tree structure internally), the spacebar prints the letter with that corresponding code (then internally resets the tree traveling). Morse has the benefit more common characters have shorter codes. Would be faster than all other systems and simple mechanically. Spacebar with no dots or dashes could be a space.

I had a much simpler explanation for how would the typewriters work in Equestria.
They use morse-code or it’s analog to write something down, the magic then transcribes it into actual letters.
This however implied that all the typewrites must be magical. I like your theory more, its more mechanical and probably better.

I’ve always just assumed they were like giant analog directional pads that could be tilted in eight directions for a combined total of 128 characters (with a hidden/unillustrated Shift key), but this concept is definitely more user friendly.

Ponies have key-sized wooden blocks they stick to the undersides of their hooves, that allows them to press the individual keys.
It’s like playing with chopsticks.
(type writers and pianos are also representative of two opposing factions in the Equestria tech world - those who believe the tool should be made to suit Earth Ponies’ hooves, and those who believe tools should be made to cater to unicorns first, with earth ponies having to adapt to use the tools they are given - aka made by earth ponies for earth ponies, vs made by unicorns for unicorns)
