Mushrooms aren’t really my personal cup of tea, but I have no issue for those that do like that sort of thing. Everyone has their own taste preferences, after all.

That’s supposed to be disturbing? I don’t find that disturbing at all. Fermentation like that is used in a lot of places, most notably in the production of alcohol (though the way that fermentation is used in cheesemaking is very different than how it is in the production of alcoholic beverages). As for bleu cheese, it does use a variety of mold, yes, but not one that is particularly harmful to humans.
