That’s supposed to be disturbing? I don’t find that disturbing at all. Fermentation like that is used in a lot of places, most notably in the production of alcohol (though the way that fermentation is used in cheesemaking is very different than how it is in the production of alcoholic beverages). As for bleu cheese, it does use a variety of mold, yes, but not one that is particularly harmful to humans.

In short yes, but really it has a rather disturbing story. First a bacteria is put into the milk and cultures are grown. Once the bacteria ferments the chease they cure it. With the exception of a few where the mold litterally is part of the chease. I think blue chease is not exactly cured due to the mold having a natural resistence to toxins.
