Check out the OrbiTouch linked below. It manages to cover every button on a 104-key US keyboard except the Menu key.
Enter: both hands (er… hooves) south.
Escape: both hands southwest.
Tab: left hand north, right hand south.
Backspace: left hand west, right hand south.
Delete: left hand southeast, right hand south.
It uses one-handed gestures to toggle Shift, Caps Lock, Num Lock, and a mouse mode. And Caps Lock does double duty, letting two sets of non-alphanumeric keys overlap. For example, both hands south with Caps Lock on maps to the down arrow key.
(Actually, looking at the documentation, there should be an available place for the Menu key: Caps Lock + Delete. But it may or may not have been implemented that way.)

If they work like clickable analog sticks with L3 and R3 buttons, you could double, triple, or even quadruple the number of available inputs.
Pressing the left key in while tilting could act as a Shift key, for instance.
