Race Generally does affect body type and build.  
In the case of the ponies, we actually know that it isn’t affecting build, as we’ve seen the different builds across all pony types. In human terms, it would probably amount to only facial features and skin tones.
 
And by Angel, I meant as in the physical archetype.  
Angel is a term with a lot of baggage. Winged humanoid has much less.
 
Also, most of the guard are Pegasi, so they’re more inclined to peacekeeping than the other two.  
I… what? When have we seen numbers for the composition of the guard? We just see pegasi more often because they pull Celestia’s chariot around. Even if there are more pegasi, which is unknown, that just means that the guard has more positions for flyers.
 
We’ve never seen anything to hint that the pegasi care more about order than the other two tribes. If we take a look at pre-Equestrian times, the pegasi were the most aggressive of the three, which would actually imply that they were another kind of winged humanoid…

When Elves make cities in fiction, they are either made entirely from wood, or magnificent and oftentimes gaudy and misplaced ivory towers littered everywhere. And typically, only Elves are allowed in their cities when not on business.
 
That’s a pretty good argument against unicorns being elves, when you put it like that. Canterlot is not made of wood to any exceptional extent, nor is it closed to anyone.
 
Dwarf cities are also generally closed to outsiders, which is a common condition for cities composed of one race in fantasy settings. Elven cities tend to be hidden, which doesn’t describe unicorns in the slightest.
 
And fairies are nature spirits, not elves. And since all Fairies fly and use magic, that’s not truly applicable to anyone but Alicorns.
 
I’m using fairy in the more general term, which includes things like elves rather than being limited to Tinkerbelle-esque pixies. Elf seemed like a good term for a nature spirit, as they’re generally associated with, well, nature and the natural world, rather than industrialization.
 
When using Tolkien races, that seemed the closest term.

Pegasi live in the clouds, fly and are generally keep peace, much as Angels would do.
 
They’re in clouds, not the afterlive or another plane of existence. The only pegasi that are shown to keep the peace are part of the Royal Guard, which also has unicorns and earth ponies. Not particularly angelic, unless you consider every group of bird people and hawkmen to be angels.
 
Pegasi do manage the weather, but the earth ponies take responsibility for the, well, earth and the unicorns are supposed to handle day and night. If the pegasi are angels, then so are the other two tribes. Whatever you call them, the ponies are the same species.
 
And if you didn’t notice, the types look very different.  
I did not notice that, no. But I have noticed that all body types have been used by all three major tribes and that Rarity has the same build as Applejack.
 
The three types are basically different races, but pony type alone doesn’t seem to affect things like build and body shape. Differences, but I wouldn’t call them huge.

Kelpies and Seaponies are most likely to be sirens and merfolk respectively.

Why? What makes them look or act like dwarves? They’ve basically been treated as earth ponies without magic, which makes them come across as the closest thing to a human equivalent in the setting.

Actually, if anything, Unicorns are the closest to a typical Elf, being that they’re almost universally elitist snobs who use magic.
 
That’s… not really exclusive to elves. The only even slightly elfy thing that they have is magic, but all ponies have some kind of magic. Earth pony nature magic and pegasi weather manipulation both sound more specifically elf-like than what unicorns have.
 
Unicorns magic is studied like a science, they’ve been shown to build large cities, and are associated with mountains and jewels. Aside from the magic, they sound more like dwarves. Actually, plenty of dwarves used magic, so…
 
Of course, ponies as a whole are presented as nature spirits of some kind, so they’d be the elves to the rest of the setting.
 
As you said, Diamond Dogs are a good fit for dwarves. What about other races?

But I’m not drawing them as angels haha. I’m drawing them as humans with fantastical elements. They’re facial features are more aimed towards their race, for example I see Dash as being Greek, so I give her the traditional romantic nose :3

Earth Ponies, with their direct connection to the earth, would be humanized as passable for human, but not quite. Maybe with a consistently healthy glow, maybe?

Donkeys are probably the closest to the humans of the setting. Or maybe some of the other mundane sapient beings, like the cows or the buffalo.

Ponies as a whole are the elves/fairies of the setting. They do have a direct hand in managing nature, after all.
 
I think that earth ponies are actually the most elf-like, as they’re connected to the earth.

Still, seeing as they’re Angels, you could have instead given them finer features, possibly with a more delicate feel. Elves are particularly known for harsh facial angles, not Angels. And the earth equivalent would have a more sturdy facial structure.
 
The three types are supposed to be very different, and even their faces would be completely different in structure.
