I think on a more fundamental and spiritual level, Belle has more in common with Rarity because Rarity wishes to leave Ponyville for a great adventure to the beautiful castle of Canterlot and meet her prince. Could she find a handsome stallion in Ponyville? Probably. But she’s probably less about looks at more about what a prince would represent.
The point is I think Rarity would truly relate to Belle. And honestly a Blueblood x Rarity might actually be an interesting parallel except Blueblood instead of being looking ugly just has an ugly demenor. But behind that unattractive facade, he might truly be a hero.

Spike is Lumiere…
There I settled it.
But Spike’s too much of a cool guy to be Gaston. Besides the dragon=beast allegory works better.
Then that means that Applejack is Beast while Spike is Gaston.
I’d pick someone more rough-yet-righteous for Beast instead of the “dude with a crush on her”, because that sounds like a description for Gaston.
My cast:
Sweetie Belle as Belle.
Spike as Beast.
Diamond Tiara as Gaston.
Of course, Twilight is the better character fit for Belle.
