The “power couple” is a common (or at least easily recognized) dynamic. Not to mention they complement well; people are often attracted to those good at what they themselves aren’t great at.
 
Honestly you pointed out one of the strongest arguments for the ship: they contrast greatly in personality and skillset but share the drive and childhood of impossible talent.
 
There’s tons of bad, generic, boring, etc stories for every ship. Considering the quantity of Twidash, it’s unsurprising there’s a lot of crap to wade through, but (in my totally unbiased opinion) the best Twidash shipfics are the best shipfics.

At least Twidash has, especially now that Twi got wings as well, several concepts and stuff to chose from whereas almost all of Appledash fics had either been about AJ’s family being hicks and against their relationship or RD and AJ somehow being competitive and somehow ending up in love due it.

I don’t see much that Rainbow Dash and Twilight Sparkle have going for them, aside from being prodigiously talented at something and the bookworm/athlete contrast.  
Back when I was reading shipfics, it seemed like Twidash had become the standard go-to ship for generic, non-concept pieces, such that I tended to not bother reading it because it’s been done a bunch of times and it doesn’t really raise many interesting questions or possibilities.
