Actually, men at arms were highly trained. They were completely undrilled, yes, and sometimes frighteningly undisciplined, but they loved battle practice.
By “undrilled” I mean that 99% of the men at arms (knights, barons, dukes and that ilk) would probably be unable (and unwilling) to duplicate classical Greek hoplite formations or Roman legionary maneuvers.
