There is agar-agar, the vegetarian analogue of gelatine. Not perfect, of course, and that’s why EG realm marshmallows taste better.

Hematogen, a.k.a. Russian Blood Candy one of its main ingredients is black food albumin taken from processed blood. Other ingredients may vary, but usually they’re sugar, milk, vanillin.

Of course, when one can’t do that, there is a difference between consciously and unconsciously consuming meat and associated products (or at least in Buddhism amongst other philosophies and religions).

OTOH you can reduce your meat products consumption by 95% and come both ahead financially and with health benefits (vs strict vegetarianism that is adverse to health).
 
Strict vegetarianism is impractical. But if you accept you really don’t save any animal’s life if you give up eating the last five grams of their body per day, that becomes quite reasonable. Stock, salad dressings, gelatin, chicken/beef flavoring (in noodles etc), sauces, lots of products that contain so little it would take you a lifetime to comprise one pig (never mind one cow), and you both exit the zone of expensive “pure organic” moving instead into “too cheap to use actual meat” zone, and you’re still getting all the nutrients a body needs.
