She’s actually not that harsh towards Pinkie; She lets her stand on the boulder and everything.  
Chances are, Pinkie has generally mistreated the boulder in the past and Limestone is just really tired of it.  
My own siblings have disobeyed my ‘requests’ quite a lot too, and I used to ‘over-react’ since apparently they don’t listen to normal reactions (since then they’ve stopped taking my stuff, and I’ve calmed down) - I can easily see Limestone being utterly sick of Pinkie stomping all over the boulder.

right, because limestone totally sabotaged pinkie’s friendship for personal gain.

It’d make sense if Limestone didn’t care for the customs of outsiders in general, particularly when they wind up on her doorstep, given that the Pies are sort of Amish-y.

This isn’t a fair comparison at all. Gilda was all-around mean in that episode (except to Rainbow Dash…sort of). Limestone was just overly concerned about non-kin messing up the farm she’s responsible for. She had valid concerns, she was just rude about them. That’s not on the same level as Gilda bullying ponies just for the sake of bullying.

My headcannon is that Limestone became more acid when she was given the farm to run the business, all the stress probably is only an attempt to do everything as good as she can, but still hasn’t do enough to earn her family admiration.

No, not really. Limestone didn’t go out of her way to insult and degrade others. She’s just blunt, gruff, and impatient.

Well a lot of people think that Pinkie overreacted to Gilda in season 1, but heh, it’s Season1 problems, just like Trixie.

Suddenly, Pinkie being so eager to make nice with Gilda makes perfect sense.
