The impression I got is that she was a little unbalanced, presumably from past experiences - not completely yandere bonkers by any stretch, but it was clear that staying as her surrogate child wouldn’t really be healthy… for her. She does seem to realize it’s not a good idea when she lets you exit the ruins.
It’s a sort of mild irrationality I can symphatize with.

Basically, Toriel is nicknamed Goatmom for a reason. If upon playing the game you don’t find yourself becoming emotionally attached to her as a maternal figure, you may want to make sure that you are not in fact a robot or some form of soul-less husk.
I found her kinda creepy, to be honest- that is, until I realized I was actually supposed to find the “I’m your mommy now!” stuff endearing, at which point I just felt insulted.

Sucks to be the poor asshole who pulls a Genocide run and gets the…little surprise at the end of his next True Pacifist run. XD
Yes and no. You can do a pacifist run, but it’ll end badly regardless of what you do.
Shouldn’t pacifist be impossible, then?
I beat the game and stayed with her myself. Released all the monsters and enjoy delicious pie.
