From what I understand, that’s because the human mind doesn’t see the entire “face” when looking at someone. The mind notices all the individual parts and pieces, and subconsciously puts them all together. Which is part of what causes disorders like prosopagnosia, where a person can’t recognize faces, even family members/their own. Their minds aren’t putting the individual pieces together into a single whole. So each time it’s like they’re seeing the face for the first time.
 
So even though the mouth edits have the mouth turned upside down, your mind only sees the individual mouth part, and it knows what is right-side up for the mouth.

. . . I can’t possibly help it. Every time I see these upside down mouth edits, I can’t psychologically click to seeing the change! I instead see the original picture!
