Also, the part about Zesty liking food with very little flavor gets fancy food all wrong. In fact, haute cuisine often has very intense flavor, which wouldn’t be good in large quantities: a little caviar tastes interesting, but a mouthful of caviar would taste basically like salt.

Because it’s expensive. Only very rich people could afford to eat delicacies like normal food. Also, many delicacies have rather… specific taste; it’s probably so small so patrons won’t throw up.

A good deal of fancy food comes in small portions because some of the ingredients are uncommon and expensive for restaurants to obtain.  
Other times, the chef puts an artisic twist on the dish, requiring more attention to detail, so the smaller the plate, the less time it will take to prepare for the customer and the more focused the chef can be.  
Unfortunately, some fancy restaurants will just charge more for less because they know they can get away with it.
