I still have no real idea how valuable diamonds and other gemstones are in Equestria. If I couldn’t sell them or use them as currency somewhere else, I’d probably just keep them around to help feed dragons or something :o

Applejack: At first I didn’t know what to do with the diamonds. I tried burying it, burning it and destroying it. But in the end we decided to give it all back.

Well, apparently you can find most of these jewels by just wandering out and digging.
 
No reason they would have any real value.
