The same reason why Queen Celestia became princess Celestia
 
That’s because Disney has established that Queens = evil, and Princesses = good. There is no such stereotypical animated convention for Kings/princes.
 
In fact, Faust originally titled both Celestia and Luna Queen. It was Hasbro’s request, citing the Disney example, for her to change it.

The word “king” isn’t anywhere in the transcript except as part of different words. They used the term leader, not specifying an official title because that’s up to Thorax and the changelings to decide. In universe, other than Equestrian relations, they haven’t decided what policies to change or keep.
