Multicolored creatures definitely can. You can get halfway to Victory with just a Transguild Courier.
With lands, it’s a bit more complicated. Coalition Victory cares about basic land types, which means that not all dual lands will qualify for consideration. Hallowed Fountain, for example, is explicitly a Plains Island, which means it covers two of the five by itself. However, something like Seachrome Coast has no land types at all and wouldn’t put you any further towards winning the game with this spell.
Of course, that means that combining the aforementioned Courier with Prismatic Omen and literally any land means you can achieve Coalition Victory off of just three permanents.
