I doubt he was mesmerized. Most likely it was just trolling in the style of “yes, yes, of course, as you say, everything was so and even more”.  
That is if he was trolling her. Because we don’t know how dragons feel when they eat gems, and therefore he could simply describe the juiciness of the stones that he and Rarity obtained. After all, they were rather large and beautiful gems, just like grapes the size of a peach.

I finally figured out what you meant. At the end of the first chapter (or whatever you call it) Spike said Rarity’s gems tasted sweet and tangy. I think he was just trolling Twilight in response to her teasing about “gems” meaning something else.
