Actually, according to the Pinkie’s files her friends found in Party Pooped, she plans her parties out years (possibly even decades) in advance, so I see no reason why she couldn’t plan out other things that far ahead if she wanted to.  
Though she seems like the kinda mare who’d rather live her life (mostly) day-by-day, due to finding the spontaneity to be a big part of the fun in life.
