Fluttermac was never a thing in the show so, there is that.
 
Cherriemac was most likely ATTEMPTED between Mac and Cherilee, but their combined jobs made it far too difficult and it was more of a “I guess we should do this…” and had no substance to it.
 
Marblemac was cute but… that’s kinda about it. They Awkwardly stand around eachother and Pinkie keeps shoving the two wallflowers together.
 
Sugarmac is the first time we’ve ever seen mac Honestly be smitten with someone.

The ship is canon

Seeing how this is now a canon thing, part of me wishes I could animate just so I could make an MLP version of “The Lumberjack Song”.

Fanfics only get AU if their universe is too different from the canon. Like if they introduce a human or ship non canon pairings. This trigger an entire chain of additions that no longer feels like the established universe in the series.  
Fanfics of course are never canon, but they can be faithfull enough to the series to still be considered the same universe. Best example are IDW comics.

I personally think people are hoping that the show will forget about whatever they don’t think fits into the show.  
Like I never liked the modern construction equipment in that one Daring Do episode.  
I prefer more fantasy elements than modern technology elements.  
But everyone has their preferences, I’m sure some don’t want Any shipping elements in the show what’s so ever.  
That would be like if Shinning Armor got generic character development during season 1, started dating Princess Cadance in season 2.  
Some fans probably wouldn’t agree with Cadance in Season 2.  
And if by the end of Season 3 they put the idea of them getting married some would be upset with that…  
Ehh, whatever, can’t please all the fans.  
I just want more pony.

there’s a huge difference between a fanfic that honestly feels like just another story set in the universe that fills an important gap not seen, just without an official stamp of approval, and a drama crossover fic with Undertale or something.

Yup, but they will never have the satisfaction of knowing that canon Mac share the sympathy as his shippers. They will always need to create AU in their fanfics to accomodate the specific ship, explain to newcomers why they have this pairing rather than the one depicted in the show etc.
