I doubt they’re the parents of the students. Likely as not, they’re there as representatives of their countries attending the school’s opening. Almost all of the are rulers – the only exception are Grandpa Gruff, but then again Griffonstone doesn’t have a formal leadership to speak of, and the hippogriff adult – and it doesn’t make sense for some of them to be parents of the students (Celestia and Ember, chiefly).
Also, who’s mother exactly is Celestia? She couldn’t be Sandbar’s, could she?
He’s the oldest and most respected of the rulers they don’t have :P
For transparency’s sake, that was intended as a very roundabout Pratchett reference
That being said (and I agree with you re: the parents or rulers thing), who is the adult hippogriff then? If the rulers are the ones attending, shouldn’t it be Queen Novo in his place?

Although I doubt Grandpa Gruff is considered a “ruler” among the griffons. Maybe they sent him because he’s the oldest one among them?
They could have had roles beyond being bullies, we’ll just never be able to see that.

There only role in the show was to be generic bullies who set several CMC plots in motion by mocking them. Now that they are good, nobody knows what to do with them so that’s the end of their story.
My head canon is that they’re hanging out with Twist, lamenting the cruelty of fate together.
