You’re absolutely right, but the point is that he is trying to show respect, and that counts. It counts a lot.
(No Muslim in the right mind would hold it against a non-muslim if he omits the phrase, but you get brownie points for saying it :) ).

Major respect for you too for actually saying “Peace Be Upon Him”. Not too many non-Muslims (I’m assuming) have the understanding or courtesy to actually say that.
You aren’t, but this image is more of a reference than actually showing anything so it’s fine and respectful.
There are some religious films that reference Mohammad (PBUH), although they never actually show him (characters either talk to him off-screen or the movie takes place from his point of view. Pretty interesting concept if you ask me).
Muhammad face is never portrayed due to the Alcorah, which considers this act as a sin.
