Have you even done what I mentioned and listened to her dialogue in the later part of that scene? I’ll type up a transcript: Wallflower says, “I’m so ashamed. When I first found the memory stone, I only erased little things: awkward hellos, saying the wrong thing, literally any public speaking.” Then Twilight says, “I’ve had plenty of awkward moments I wish I could erase too.” Wallflower responds to that by saying “but it’s no excuse; I got so used to erasing memories that I got completely carried away. I’m sorry for everything.”
(Keep in mind that the only thing that was done to prompt all this was Sunset walking towards Wallflower as she sat down off to the side, looking at the ground while Sunset and her friends were rejoicing.)
As for the other things you mentioned: Wallflower may or may not have known that the memories stolen by the memory stone would be gone forever on the sunset of the thrid day, but she did know what it was, what it did, and how to use it from the scroll she found with it. (I have absolutely no idea where you pulled Sunset being killed by it from though; that doesn’t line up with its function at all.) Furthermore, nobody can be expected to act rationally during a fit of anger. In order to enter a fit of anger in the first place, you need to be angry enough about something that your anger is the only thing you’re thinking about; and even then Wallflower went from angry to horrified as she realized exactly what she had just done to Sunset, even before the stone was destroyed. I’m not sure what you qualify as being an asshole, but Wallflower’s just a socially anxious, lonely girl who ended up with her hands on a powerful magical artifact from another world.

Spoilering this because I don’t want to risk any… spoilers.
What kind of person uses a dangerous magical artifact that they don’t fully understand on someone else in a fit of anger? For all Wallflower knew, it would have killed Sunset or rendered her memories permanently destroyed. Neither of those things happened, obviously, but Wallflower had no sure way of knowing that for sure. I would call someone not an asshole if they made the choice not to zap someone with a magic stone that fucks with people’s memories and perception. It’s real easy to be sorry after it’s all said and done, and she made the choice to attack someone with her mysterious magical artifact.
No she isn’t; she’s simply a lonely girl who ended up with a dangerous magical artifact with power beyond her understanding
Just look at how her expression changes from angry to horrified during the part of this scene where Sunset loses her memories of her friends, and listen to her dialogue in the part of the scene after the stone is destroyed.
If anything, Wallflower is notable for not being an asshole nor having any truly malicious motivations for her actions

In a side by side comparison to some other shows, you’re right, but in the context of a show that’s normally so light-hearted, a scene like this is quite disturbing.

It’s the mental aspect of it ya jaded dude. By her mannerisms this is still when she was actually relatively happy under Celestia. To her she’s just been shunted into some alien world with a body not even close to her own and strange looking people she has no recollection of. Not to mention loss of magic so suddenly.

I would not be surprised if wallflower had nightmares of that very moment for quite a time. That look on her face after she drained sunset’s memories was clearly “Oh no…What have I done”

I mean it’s bad enough to see her wake up lost, scared, and alone… calling for Princess Celestia and trapped in a body she can’t remember how to control. But add in those moments right before that when she was pretty much begging someone who doesn’t even remember being her friend not to forget her, and it kicks the whole thing over into nightmare territory.
