If you’re talking about The Journal of the Two Sisters, it also said rather unambiguously that Clover the Clever was a mare, but “Forgotten Friendship” – which, being an Equestria Girls short, is as canon as anything in FiM – depicted him as a stallion anyway.
This, of course, does not affected the status of Luna and Celestia’s birth, but it does impact the reliability of The Journal. If it was overruled once, it is not difficult to imagine that it can be overruled again.
So the time in the moon might have atrophied her in a way…
I’m gonna agree with @mana the immortal on this one. IIRC, aren’t Luna and Celestia shown to be closer in size 1000 years ago, like when facing off Discord initially?
And also, going back to what I’ve said about memory, Luna wouldn’t remember much about being a newborn foal (if anything at all) while Celestia had 1,000 years (at least) between her sister being born and Flurry Heart being born, so she wouldn’t remember much, if anything at all, about raising an Alicorn foal (assuming that she even paid attention to how you should properly do it back then).
…Or Luna’s growth needs a thousand years to catch up due to being sealed in the moon…
I think the age gap is greater than a mere year. Celestia is so much bigger than Luna. She could be several hundred years older than Luna. Only by observing them for several thousand years could we see whether Celestia stops growing (or had stopped growing) which will allow Luna to catch up to her in size.
Just by looking at AJ and Applebloom, we know several years separate their birth dates. With the two Alicorns, I believe it’s centuries.

I think it might also be worth noting that given how long the royal sisters have lived, Celestia might not remember her parents taking care of Luna given the fact that we tend to forget things as we get older, especially details about events. Also, since we don’t know how long the time difference between Celestia and Luna being born was, it’s possible that it was only eleven months to a year between their births (assuming ponies, especially magical ones with horns and wings, use the same gestation periods as horses).

I’m not exactly one to consider most secondary content in this series canon, as it constantly breaks the setting, so even if they say it is, I’d probably be able to show it can’t be.

Looks… somewhat similar. If I’m guessing correctly, the gods have had to change with the times in Pegasus? If so, then that’s more a result of the gods being weak enough that candy CAN be supplemental.

What book? The writers of the show have only clarified that the COMICS are canon unless the show says otherwise, and that still leaves most of the comics completely impossible to fit in canon.

They are natural alicorns though. Book says so, and it hasn’t been debunked. Besides, being the only two Natural born alicorns that are both female and don’t go sleeping with every dandy boy around is a 100% guarantee to never see a natural born alicorn birth. :D

Well, I did get the idea from a book series in which the Greek Gods can eat candy and deserts as supplements for ambrosia…

Even if they’re older than Equestria, Celestia’s older than Luna, she’d have witnessed a naturally born alicorn in her life time if they’d both been born alicorns.
I’m not completely convinced by it alone, granted, I still stand by the idea that Celestia and Luna might very well be physical gods.
The ambrosia idea though… no, sorry, gotta put something important in the way. “Normal” foods (read: anything a mere mortal can get a hold of to eat) are specifically described as something you cannot compare to ambrosia in legend, meaning it’s impossible for the cake to be a replacement.
Ah, but they said that it was something that “Equestria had never seen”. It seems as if they were purposely vague in their statement, as if they were trying to hide something.
