Boreas was the latin/Greek name for the north wind, offering the implication it was not just a decoration but the grifons controlled the wind with it.
The comic tried to pull the griffons in a German direction with Rinehart and Coach Klaus.
The Idol of Boreas was created by King Grover. There’s no indication that there was anyone named Boreas. It just seems to be named for the region. Griffonstone is nestled into a range called the Hyperborean Mountains.
There is actually a pattern in the names of the different species in that world. Almost all dragons have names representing themes of fire, rudeness, or certain textures or shapes. All Griffons have names related to air, wind, or birds, or in any case names with the letter G and one or more of the other motifs. All changelings are named after insectoid things. And so on.
