Launch was never really “evil”, per se. Blonde Launch is definitely Chaotic Neutral, but even at her most hot-headed and trigger-happy moments, I still wouldn’t say she was outright evil.  
Also, speaking of Blonde Launch, I think Flutterbat could be a better analogue to her than Discorded Flutters, or at least a more visually distinct change.

V Yeah, she had some pretty badass moments (and if you count Fillers, also that one scene where she beats the shit out of the assholish teacher)
 
I do have to mention, the scene AFTER she slapped Buu, was one of the most disturbing things I’ve seen as a child at that point.  
Yes, it even disturbed me more than the “Balloon-belly”-scene…

I always thought Chi-chi was cute in Dragonball, took it to a level to bitch when Gohan was a child, cooled off when Goten was born and had moments of cool when:  
-she flashbacked to Goku and her first date  
-she told off Videl (best first impressions)  
-she knocked that snotty woman that bad mouthed Goten and Trucks  
-she straight slapped Majin Buu without any regards of her own safety
 
She become more little easier to deal with as she got passed motherhood, and lets face facts: having Goku as a husband is NOT the easy thing for any human female.
