I’m going to go back to the idea of the griffon and the hippogriffs
 
if it is mythological, they are magical creatures created and imagined by the gods directly and all mixing is possible but their descendants depend on the goodwill of the gods.  
Magical gay spawn is possible only in the mythological version.  
(but you need gods, not evoke in the show.)
 
if it’s evolution then it follows a sequence of adaptation that has allowed these species to emerge.  
Perhaps they had a common ancestor who formed two different branches then their possibility of procreation depends on the number of generations that separate them from this common ancestor, limited to 700 generations.  
it allows some possibility, which leaves a chance but remains rare. (this remains the basis of life)
 
if it is magical they are the result of species merging spell, new creation may have a chance to have a progeny.  
(merge species are present in the series)  
However, as there are species in the series (e.g.: griffon; hippogriffs),  
their progeny are easy to combine with other species.  
The fact remains that the offspring obtained can give a new species.
