I can imagine her using some magical device twilight gave the teachers and students to allow them to see eachother remotely to do the class. The thing is due to the isolation taking its toll on pinkie her class mostly consists of her having imaginary conversations with her “friends”
 
Pinkie: you wouldn’t leave me here all alone like my friends did, would you madame leflour? starts voicing madame leflour of course not mademoiselle, we love you
 
Ocellus: should we keep watching this? It’s just Pinkie having another schizophrenic episode

Gallus: well it started out with her bumping the cupcakes together, which then turned into them marrying eachother. Later Blue decided to cheat on Yellow with a green cupcake. Later blue gave birth to Green’s two kids with Yellow thinking they were his. In the final part it just showed Blue crying in the mirror, then pinkie said “and that’s where babies come from!” With a haunted look on her face before ending the class

Gallus: it was actually quite entertaining, especially the part where mr Cake walked in and Just kinda watched Pinkie’s little performance from the background with a horrified look on his face
