Pegasus sky burial is a little different. It’s more like burial at sea. They use a traditional coffin hoof-made from clouds and set it adrift to biodegrade naturally.
Earth ponies and unicorns hate it.

I always figured they would opt for cremation and scatter the ashes into the winds. My headcanon is that they believe the spirits of their ancestors are in the winds.
I actually spent way too much time coming up with pony death ritual headcanons. Pegasi cremate their dead. Earth ponies go for simple burials; some so simple they simply wrap the deceased in a shroud and bury them directly in the ground (I always saw this as the Apple family tradition). And unicorns tend to go with elaborate mummification rituals and family tombs and crypts.
